Easy Banana Walnut Bread

Try having a slice of this delicious banana bread for breakfast. Bananas are a great source of potassium, vitamin C, vitamin B6, and soluble fiber. The addition of walnuts to this banana bread incoporate omega-3 fatty acids which have anti-inflammatory properities and may be beneficial in cancer prevention. This banana bread uses a biscuit baking mix to save time on preparation!

Ingredients

1 (8-ounce) package reduced-fat cream cheese,  softened
1 cup sugar
3 medium bananas, mashed
1 egg, beaten
2 egg whites
2 cups biscuit baking mix
1/2 teaspoon ground cinnamon
1 cup chopped walnuts (optional)

Directions

1. Preheat oven 350°F. Coat 9x5x3-inch loaf pan with nonstick cooking spray.
2. In mixing bowl, cream together cream cheese and sugar until light. Beat in bananas, egg, and egg whites. Stir in biscuit mix and cinnamon until just blended. Gently stir in walnuts. Turn into prepared loaf pan.
3. Bake 45 minutes-1 hour, until toothpick inserted in center comes out clean. Cool in pan 15 minutes.
